Easy Quinoa Tabbouleh Salad

A fresh quinoa-based tabbouleh packed with parsley, mint, tomatoes, cucumber, scallions, and a zesty lemon-garlic dressing. Serve it chilled as a side dish or add chickpeas for a more substantial vegetarian meal.

Ingredients
  

Quinoa
  • 1 cup Uncooked quinoa
  • 2 cups Water or vegetable broth
  • 1/2 teaspoon Salt, for cooking quinoa
Salad
  • 1 cup Fresh flat-leaf parsley, finely chopped
  • 1/2 cup Fresh mint, finely chopped
  • 1 cup Tomatoes, finely chopped, or halved cherry tomatoes
  • 1 medium Medium English cucumber, finely diced
  • 3 scallions Scallions, thinly sliced
Dressing
  • 1/4 cup Extra-virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 1 clove Small garlic clove, finely grated or minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Rinse the quinoa thoroughly in a fine-mesh strainer to remove excess saponin, which can make the cooked grains taste bitter. Combine the rinsed quinoa, water or vegetable broth, and 1/2 teaspoon salt in a saucepan.
  2. Bring the quinoa mixture to a boil, then reduce the heat to low and cover the saucepan. Simmer for about 15 minutes, or until the liquid is absorbed and the quinoa grains have opened.
  3. Remove the saucepan from the heat and let the quinoa stand, covered, for 5 minutes. Fluff it gently with a fork, then spread it on a shallow tray or plate so it can cool completely.
  4. Whisk together the olive oil, lemon juice, minced or grated garlic, remaining 1/2 teaspoon salt, and black pepper in a small bowl. Taste the dressing and adjust only if needed before adding it to the salad.
  5. Place the cooled quinoa, parsley, mint, tomatoes, cucumber, and scallions in a large bowl. Pour the dressing over the mixture and toss gently until the grains and vegetables are evenly coated.
  6. Refrigerate the salad for at least 20–30 minutes so the flavors can blend. Taste just before serving and adjust with more lemon juice, salt, or olive oil as needed.

Notes

Cool the quinoa completely before combining it with the herbs to prevent wilted greens and excess moisture. If making the salad well in advance, seed watery tomatoes or briefly drain diced cucumber. Optional additions include 1/2 cup crumbled feta, finely diced red onion, or chickpeas.
