Easy Quick-Pickled Vidalia Onions

Thinly sliced Vidalia onions soak in a hot sweet-and-tangy vinegar brine for a fast refrigerator pickle. They are ready in 30 minutes and taste even better after several hours or overnight.

  • 1 large onion, about 10-12 ounces Vidalia onion, very thinly sliced
Pickling Brine
  • 1/2 cup Distilled white vinegar
  • 1/2 cup Water
  • 2 tablespoons Granulated sugar
  • 1 1/2 teaspoons Kosher salt
Optional Seasonings
  • 1/2 teaspoon Whole black peppercorns
  • 1 clove Small garlic clove, lightly crushed
  • 1/4 teaspoon Red-pepper flakes

Method
 

Step-by-Step
  1. Slice one large Vidalia onion into very thin rings or half-moons, separating the pieces as you go. Pack the onion into a clean pint jar or another heatproof container, leaving enough room for the brine.
  2. Add the distilled white vinegar, water, sugar, kosher salt, and any optional peppercorns, garlic, or red-pepper flakes to a small saucepan. Warm the mixture over medium heat for 3-5 minutes, stirring until the sugar and salt dissolve and the brine reaches a bare simmer.
  3. Pour the hot brine carefully over the onions, making sure the slices are submerged. Press the onions down gently with a spoon so the warm liquid can reach every layer.
  4. Let the jar cool uncovered or loosely covered at room temperature for about 30 minutes. The onions may be used at this point, but they will develop better flavor and color after additional chilling.
  5. Cover the jar and refrigerate the onions for at least 30 minutes, or preferably for 4 hours or overnight. Keep them refrigerated and use within approximately 2-3 weeks.

Notes

This is a refrigerator pickle, not a shelf-stable canning recipe. Slice the onion evenly and thinly for the best texture, and use a mandoline guard carefully if you choose one.
