- Heat the oven to 350°F and grease a 2-quart baking dish.
- Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is no longer pink. Drain any excess fat from the skillet.
- Stir in the tomato sauce, undrained diced tomatoes with green chiles, and taco seasoning. Bring the mixture to a gentle boil, reduce the heat, and simmer uncovered for about 10 minutes.
- Arrange three tortillas in the bottom of the greased baking dish, overlapping or cutting them as needed to cover the surface.
- Spread half of the beef mixture over the tortillas and sprinkle with about 1 cup of shredded cheddar cheese.
- Add the remaining three tortillas, followed by the rest of the beef mixture and the remaining cheese.
- Cover the dish and bake for about 20 minutes. Uncover and bake for 5 to 10 minutes longer, until the casserole is hot and the cheese is fully melted.
- Let the casserole stand for 5 to 10 minutes before cutting and serving.
Notes
Overlap or trim the tortillas so the dish has good coverage and the portions hold together. Resting the casserole for 5 to 10 minutes after baking helps the layers firm up. Refrigerate leftovers in a covered container and reheat until hot.
