Easy Pumpkin Cream Puffs

Crisp homemade cream puff shells are filled with a softly spiced pumpkin cream cheese and whipped cream filling. This autumn dessert makes 18 to 24 individual pastries.

Ingredients
  

Pastry Shells
  • 1 cup Water
  • 1/2 cup Unsalted butter, cut into pieces
  • 1/4 teaspoon Salt
  • 1 cup All-purpose flour
  • 4 Large eggs, lightly beaten
Pumpkin Filling
  • 1 8-ounce package Cream cheese, softened
  • 1 cup Canned pumpkin purée, not pumpkin pie filling
  • 1/2 cup Packed light brown sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Pumpkin pie spice
  • 1 cup Heavy whipping cream
  • 2 tablespoons Confectioners sugar
Garnish
  • As needed Additional pumpkin pie spice or cinnamon, optional

Method
 

Step-by-Step
  1. Heat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place the water, butter, and salt in a saucepan and bring the mixture to a full boil.
  3. Add the flour all at once. Stir vigorously over medium heat for 1 to 2 minutes, until the dough forms a ball and pulls away from the sides of the pan.
  4. Remove the saucepan from the heat and cool the dough for about 5 minutes. Add the lightly beaten eggs gradually, beating well after each addition until the dough is smooth, thick, and glossy.
  5. Pipe or spoon the dough into 18 to 24 mounds on the prepared baking sheet, leaving room between each mound.
  6. Bake at 425°F for 10 minutes. Reduce the oven temperature to 375°F and bake for another 15 to 20 minutes, until the shells are puffed and golden.
  7. Turn off the oven, make a small slit in each puff or leave the oven door slightly open, and let the shells dry for about 5 minutes. Transfer them to a rack and cool completely.
  8. Beat the softened cream cheese, pumpkin purée, brown sugar, vanilla, and pumpkin pie spice until smooth.
  9. Whip the heavy cream with the confectioners sugar until stiff peaks form. Fold the whipped cream into the pumpkin mixture until evenly combined.
  10. Slice the cooled shells horizontally or make a small opening in each one. Pipe in the filling, replace the tops, and dust with confectioners sugar or cinnamon before serving.

Notes

Use pumpkin purée rather than pumpkin pie filling. Do not open the oven during the first 20 minutes of baking. Refrigerate filled cream puffs until ready to serve.
