Easy Pretzels Recipe for Soft, Homemade Results

These classic soft pretzels have a tender, chewy center and deeply golden crust created by a brief baking-soda bath. The recipe makes 8 large pretzels or 10–12 smaller pretzels.

Ingredients
  

Dough
  • 1 1/2 cups Warm water, about 105–110°F (40–43°C)
  • 2 1/4 teaspoons Active dry or instant yeast
  • 1 tablespoon Brown sugar or granulated sugar
  • 1 teaspoon Fine salt
  • 1 tablespoon Unsalted butter, melted
  • 3 3/4 to 4 cups All-purpose flour
Alkaline Bath
  • 10 cups Water
  • 2/3 cup Baking soda
Finishing
  • 1 large egg yolk plus 1 tablespoon water Large egg yolk beaten with water
  • As needed Coarse pretzel salt or flaky sea salt
  • 1–2 tablespoons Melted butter, optional

Method
 

Step-by-Step
  1. Combine the warm water, yeast, and sugar. If using active dry yeast, let the mixture stand for about 5 minutes until foamy. Instant yeast may be mixed directly with the flour.
  2. Add the fine salt, melted butter, and most of the flour. Mix until a rough dough forms, then add the remaining flour gradually until the dough is soft and slightly tacky.
  3. Knead by hand for 5–8 minutes or with a dough hook for about 4–5 minutes. The finished dough should be smooth, elastic, and pliable rather than sticky.
  4. Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 45–60 minutes, or until doubled in size.
  5. Heat the oven to 425°F (220°C) and line baking sheets with parchment paper. Divide the risen dough into 8 pieces.
  6. Roll each piece into a rope about 20–24 inches long. Shape each rope into a pretzel and press the ends firmly into the dough so they stay attached.
  7. Bring 10 cups of water and the baking soda to a boil. Boil each pretzel for 20–30 seconds, turning once if needed, then transfer it with a slotted spoon to the prepared baking sheet.
  8. Brush each pretzel with the egg wash and sprinkle with coarse salt. Bake for 12–15 minutes, until deeply golden brown, then brush with melted butter while warm if desired.

Notes

Do not add all the flour at once because excess flour can make the pretzels dense and dry. The baking-soda bath is essential for the characteristic pretzel color, crust, and flavor. Leave space between pretzels for even browning. Store cooled pretzels in an airtight container and rewarm briefly before serving.
