This no-cook pizza salad combines crisp greens and classic pizza toppings with a zesty homemade Italian vinaigrette. It makes 4 servings and comes together in just 15 minutes.

Ingredients
  

Salad
  • 8 cups Chopped romaine lettuce or mixed salad greens
  • 1 cup Cherry tomatoes, halved
  • 4 ounces Mozzarella, cut into small cubes or mini mozzarella balls
  • 3 ounces Sliced or mini pepperoni
  • 1/4 cup Thinly sliced red onion
  • 1/4 cup Sliced black olives
  • 1/4 cup Sliced banana peppers or pepperoncini
  • 1/4 cup Grated Parmesan
  • 1/2 cup Croutons, optional
Italian Dressing
  • 1/4 cup Extra-virgin olive oil
  • 2 tablespoons Red-wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Garlic powder or 1 small grated garlic clove
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Wash the lettuce thoroughly, dry it very well, chop it into bite-size pieces, and place it in a large bowl.
  2. Add the halved tomatoes, mozzarella, pepperoni, red onion, black olives, banana peppers, Parmesan, and optional croutons.
  3. Whisk the olive oil, red-wine vinegar, lemon juice, Italian seasoning, garlic, salt, and black pepper in a small bowl, or shake them together in a jar.
  4. Pour the dressing over the salad immediately before serving, toss gently, and serve.

Notes

Dry the greens thoroughly and dress only the amount you plan to eat immediately. For stronger pizza flavor, add 1/4 teaspoon dried oregano and 1 tablespoon finely grated Parmesan to the dressing.
