Easy Pizza Frittata

Egg Base
  • 8 large Large eggs
  • 1/4 cup Whole milk or heavy cream
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Skillet Filling
  • 1 tablespoon Olive oil
  • 1/2 small Small onion, finely chopped
  • 1 small Garlic clove, minced
  • 1/2 cup Sliced pepperoni, quartered or chopped
Toppings
  • 1/2 cup Marinara or pizza sauce
  • 1 cup Shredded low-moisture mozzarella
  • 1/4 cup Finely grated Parmesan
Garnish
  • 1 tablespoon Fresh basil or parsley, chopped

Method
 

Step-by-Step
  1. Heat the oven to 400°F (200°C) and grease a 10-inch ovenproof skillet, preferably cast iron or nonstick.
  2. Whisk the eggs, milk or cream, kosher salt, and black pepper in a bowl until blended. Stir in the finely grated Parmesan.
  3. Heat the olive oil in the prepared skillet over medium heat. Add the onion and cook for 3 to 4 minutes, until softened, then add the garlic and cook for about 30 seconds.
  4. Add the pepperoni and cook for about 1 minute, just until it releases its savory flavor and begins to warm through.
  5. Pour the egg mixture into the skillet and cook without stirring for 2 to 3 minutes, until the edges begin to set.
  6. Spoon or spread the marinara over the eggs, then sprinkle the mozzarella evenly across the top.
  7. Transfer the skillet to the oven and bake for 12 to 15 minutes, until the center is just set and the cheese is melted and lightly browned.
  8. Let the frittata rest for 5 minutes before garnishing with chopped basil or parsley. Slice into wedges and serve warm.

Notes

Use low-moisture mozzarella instead of fresh mozzarella so the cheese melts without adding excess water. Remove the frittata when the center still has a slight jiggle because residual heat will finish setting the eggs. Refrigerate leftovers and reheat gently.
