Ingredients

Egg Mixture
  • 8 large Large eggs
  • 1/4 cup Whole milk or half-and-half
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Toppings and Filling
  • 1 tablespoon Olive oil
  • 1/2 cup Sliced or diced pepperoni
  • 1/2 cup Diced bell pepper or onion, optional
  • 1/2 cup Marinara or pizza sauce
  • 1 cup Shredded low-moisture mozzarella
  • 1/4 cup Finely grated Parmesan
Garnish
  • 1 tablespoon Chopped fresh basil or parsley, optional

Method

Step-by-Step
  1. Heat the oven to 375°F (190°C) and prepare an oven-safe 10-inch nonstick or cast-iron skillet.
  2. Whisk the eggs, milk or half-and-half, kosher salt, and freshly ground black pepper in a bowl until the mixture is evenly blended.
  3. Warm the olive oil over medium heat. Add the pepperoni and optional diced bell pepper or onion, then cook for 2–3 minutes until lightly browned and softened.
  4. Pour the egg mixture into the skillet and cook without stirring for about 2 minutes, just until the edges begin to set.
  5. Spoon or spread the marinara or pizza sauce over the eggs. Sprinkle evenly with the shredded mozzarella and finely grated Parmesan.
  6. Transfer the skillet to the oven and bake for 12–15 minutes, until the center is set and the cheese has melted. For a more browned top, broil for 1–2 minutes while watching closely.
  7. Let the frittata rest for 5 minutes, then garnish with chopped fresh basil or parsley and cut it into wedges.

Notes

Use low-moisture mozzarella and drain watery toppings such as fresh tomatoes, mushrooms, or olives. Starting the eggs on the stovetop helps the edges set evenly and reduces the chance of an overcooked exterior with a runny center.
