- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking pan.
- Beat the yellow cake mix, eggs, vegetable oil, and undrained crushed pineapple until evenly combined.
- Spread the batter in the prepared pan and bake for 30–35 minutes, until the center is set and a toothpick comes out with only a few moist crumbs.
- Cool the cake completely in the pan before adding the topping.
- Whisk the instant vanilla pudding mix with the cold milk for about 2 minutes, until thickened, then let it stand for several minutes.
- Fold the thawed whipped topping into the thickened pudding. For the cream-cheese version, beat the softened cream cheese and powdered sugar until smooth, beat in the prepared pudding, and then fold in the whipped topping.
- Spread the topping over the completely cooled cake, add desired garnishes, cover, and refrigerate for at least 2 hours before slicing.
Notes
Do not drain the pineapple used in the batter. Drain pineapple used only as a garnish. For firmer pieces, chill the assembled cake overnight. Keep refrigerated and use within 3–4 days.
