  1. Add the undrained crushed pineapple and instant vanilla pudding mix to a mixing bowl. Whisk for about 1 to 2 minutes, until the pudding mix is fully incorporated and the mixture begins to thicken.
  2. Gently fold the thawed whipped topping into the pineapple-pudding mixture. Stop folding as soon as the filling looks evenly blended so it stays light and airy.
  3. Spoon the filling into the prepared 9-inch graham-cracker crust. Smooth the top with a spatula or the back of a spoon.
  4. Cover the pie and refrigerate it for at least 2 hours before slicing. For the firmest filling and cleanest slices, chill it overnight.

Notes

Do not drain the pineapple because the juice activates the instant pudding mix. Store the covered dessert in the refrigerator and serve cold. Optional variations include 1/2 cup sweetened shredded coconut or 1/2 cup chopped pecans or walnuts.
