- Rinse the rice under cold water until the water runs mostly clear, then drain it well.
- If using raw cashews, toast them in a dry skillet over medium heat for 3–5 minutes, stirring often, until lightly golden. Set them aside.
- In a medium saucepan, combine the coconut milk, pineapple juice, water or broth, and kosher salt. Bring the mixture just to a simmer.
- Stir in the rinsed rice, return the liquid to a gentle simmer, cover, and reduce the heat to low. Cook for 18–20 minutes, or until the liquid is absorbed and the rice is tender.
- Remove the saucepan from the heat and let the rice stand, covered, for 10 minutes.
- Fluff the rice gently with a fork, then fold in the pineapple, cashews, green onions, cilantro, and lime juice. Taste and adjust the salt before serving warm.
Notes
Add the cashews after cooking so they stay crisp. Use unsweetened coconut milk rather than sweetened coconut cream. Store leftovers covered in the refrigerator and reheat gently with a small splash of water or broth.
