Easy Pickled Red Beet Eggs Recipe

A classic Pennsylvania Dutch refrigerator pickle made with hard-boiled eggs, canned beets, vinegar, sugar, onion, and beet juice. The eggs turn vibrant pink and develop their best flavor after 48 to 72 hours.

  • 1 15-ounce can Canned sliced or whole beets, undrained
Pickling Brine
  • 1 cup Reserved beet juice
  • 1 cup White distilled vinegar
  • 1/2 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 1 Small onion, thinly sliced
Optional Seasoning
  • 4 to 6 Whole black peppercorns

Method
 

Step-by-Step
  1. Place the eggs in a saucepan and cover them with about 1 inch of cold water. Bring the water to a boil, cover the saucepan, remove it from the heat, and let the eggs stand for 10 to 12 minutes.
  2. Transfer the cooked eggs to a bowl of ice water and cool them completely for 20 to 30 minutes. Peel the eggs carefully, rinsing away any small shell pieces.
  3. Drain the canned beets while reserving 1 cup of the beet liquid. If the beets are whole, cut them into slices or wedges.
  4. Combine the beet juice, white vinegar, sugar, salt, optional peppercorns, and sliced onion in a saucepan. Bring the mixture just to a simmer, stirring until the sugar and salt dissolve; do not let it boil vigorously.
  5. Arrange the peeled eggs and beets in a clean glass jar or other nonreactive container. Pour the warm pickling liquid over everything, making sure the eggs are mostly submerged.
  6. Let the container cool briefly, then cover it and refrigerate. Keep the eggs chilled while they pickle.
  7. Refrigerate for at least 24 hours before eating. For stronger flavor and a more intense pink color, wait 48 to 72 hours.

Notes

Use eggs that are not farm-fresh when possible because they usually peel more cleanly. These are refrigerator pickles, not shelf-stable canned food; keep them refrigerated and never store the sealed jar at room temperature.
