  • 1/3 cup Neutral-flavored vegetable oil
  • 1/2 teaspoon Peppermint extract

  • 1/2 cup Crushed peppermint candies or candy canes

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Combine the white cake mix, eggs, vegetable oil, and peppermint extract in a large bowl. Stir until a thick dough forms.
  3. Fold in the white chocolate chips and about half of the crushed peppermint candies.
  4. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies. Sprinkle or gently press the remaining peppermint pieces onto the dough.
  5. Bake for 8 to 11 minutes, until the edges are set while the centers still look slightly soft.
  6. Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling.

Notes

If the dough is sticky or the cookies spread too much, chill it for 20 to 30 minutes before scooping. Do not overbake; the centers should look slightly underdone when the cookies leave the oven. Use crushed candy canes rather than finely powdered peppermint candy for the best texture.
