- Heat the oven to 350°F (175°C). Grease an 8-inch square baking pan, then line it with parchment paper, leaving an overhang on two sides for easy lifting.
- Whisk the melted butter, creamy peanut butter, and packed light brown sugar in a large bowl until smooth and well combined.
- Beat in the eggs and vanilla extract until the mixture is glossy and evenly blended.
- In a separate bowl, whisk together the flour, baking powder, and fine salt. Fold the dry mixture into the peanut butter mixture just until no dry flour remains.
- Spread the thick batter evenly in the prepared pan. Bake for 25 to 30 minutes, until the edges are set and lightly browned while the center still looks slightly soft.
- Check with a toothpick, which should come out with moist crumbs rather than wet batter. Cool the blondies completely in the pan for at least 30 minutes before lifting them out and slicing into 16 squares.
Notes
Use conventional creamy peanut butter for the most reliable texture. Natural peanut butter can separate and make the batter oily or crumbly unless thoroughly stirred. Remove the blondies while the center is still slightly soft because they continue setting as they cool; overbaking can make them dry.
