- Heat the oven to 350°F (175°C) and lightly butter an 8-inch or 9-inch square baking dish.
- Toss the sliced peaches with granulated sugar, flour or cornstarch, lemon juice, vanilla, cinnamon, and salt. Spread the fruit evenly in the prepared dish.
- Combine the oats, flour, brown sugar, cinnamon, and salt for the topping. Cut in the cold butter with a pastry cutter or your fingertips until coarse, irregular crumbs form, leaving some small butter pieces intact.
- Scatter the topping evenly over the peaches without pressing it down. Bake uncovered for 40 to 45 minutes, until the fruit bubbles around the edges and the topping is deeply golden.
- Let the crisp stand for 10 to 15 minutes before serving. This allows the hot peach juices to thicken slightly while the topping remains pleasantly crisp.
Notes
Use ripe, fragrant peaches that are still firm. Frozen peaches may be used in an amount of about 6 cups and can usually go into the dish frozen, though baking may take an additional 5 to 10 minutes. Drain canned peaches very well and reduce or omit the added sugar depending on whether they are packed in syrup. For a gluten-free crisp, use a cup-for-cup gluten-free flour blend and certified gluten-free oats.
