  • 1 1/2 cups Fresh peaches, peeled and finely chopped
  • 1/2 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 eggs Large eggs
  • 1 teaspoon Vanilla extract

  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon
Optional Addition
  • 1/2 cup Chopped pecans or walnuts

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line the bottom with parchment if desired.
  2. Peel and finely chop approximately two medium peaches to make 1 1/2 cups. Drain off excess liquid if the peaches are especially juicy, but do not puree them.
  3. Whisk the flour, baking soda, salt, and cinnamon together in a medium bowl.
  4. In a separate bowl, beat the softened butter and sugar until light and smooth. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Add the dry ingredients to the butter mixture and stir just until combined. Fold in the chopped peaches and optional nuts without overmixing.
  6. Spread the batter evenly in the prepared loaf pan. Bake for 50–60 minutes, until a toothpick inserted in the center comes out clean or with only a few moist crumbs.
  7. Cool the bread in the pan for about 15 minutes, then transfer it to a wire rack. Cool completely before slicing.

Notes

Use ripe but firm peaches and drain very juicy fruit to prevent a gummy center. If the top browns before the center is done, loosely cover the loaf with foil during the final 10–15 minutes.
