- Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line the bottom with parchment if desired.
- Peel and finely chop approximately two medium peaches to make 1 1/2 cups. Drain off excess liquid if the peaches are especially juicy, but do not puree them.
- Whisk the flour, baking soda, salt, and cinnamon together in a medium bowl.
- In a separate bowl, beat the softened butter and sugar until light and smooth. Beat in the eggs one at a time, then mix in the vanilla extract.
- Add the dry ingredients to the butter mixture and stir just until combined. Fold in the chopped peaches and optional nuts without overmixing.
- Spread the batter evenly in the prepared loaf pan. Bake for 50–60 minutes, until a toothpick inserted in the center comes out clean or with only a few moist crumbs.
- Cool the bread in the pan for about 15 minutes, then transfer it to a wire rack. Cool completely before slicing.
Notes
Use ripe but firm peaches and drain very juicy fruit to prevent a gummy center. If the top browns before the center is done, loosely cover the loaf with foil during the final 10–15 minutes.
