  • 1 750 mL bottle Chilled Prosecco or other dry sparkling wine
  • 1/2 cup Peach schnapps

  1. Chill the Prosecco and, if possible, place the serving glasses in the refrigerator or freezer for a short time. Add the frozen peaches and peach schnapps to a high-powered blender, then pour in the chilled Prosecco.
  2. Blend just until the peaches are smooth and the mixture has a thick, slushy consistency. Add the Prosecco gradually and use brief pulses when possible to preserve as much carbonation as you can.
  3. Pour the Peach Bellini Slushy into the chilled glasses immediately. Serve while icy and bubbly, since the texture and carbonation are at their best right after blending.

Notes

Use frozen peaches rather than fresh peaches and ice for the thickest texture without dilution. A dry or brut Prosecco balances the sweetness of the peaches and schnapps. Avoid prolonged blending because it can warm the drink and flatten the sparkling wine.
