Easy Pasta with Bacon, Meatballs, and Tomatoes

Tender homemade meatballs and smoky bacon simmer in a chunky tomato sauce before being served over al dente pasta. This family-friendly dinner makes 4 satisfying servings in about 50–55 minutes.

Ingredients
  

Meatballs
  • 1 lb (450 g) Ground beef, or beef-and-pork mixture
  • 1 Large egg
  • 1/2 cup (about 45 g) Plain breadcrumbs
  • 1/4 cup (25 g) Finely grated Parmesan
  • 2 Garlic cloves, minced
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
Pasta and Sauce
  • 8 oz (225 g) Bacon, diced
  • 1 Small yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 28 oz can (800 g) Crushed tomatoes
  • 1 14–15 oz can (400 g) Diced tomatoes, preferably undrained
  • 1 tsp Dried oregano or Italian seasoning
  • 12 oz (340 g) Spaghetti or other pasta
  • 1/2 cup (120 ml), as needed Reserved pasta water
  • 1/4 cup, optional Fresh basil or parsley, chopped
  • As needed for serving Grated Parmesan
  • To taste Salt and black pepper
  • As needed only if needed Olive oil

Method
 

Step-by-Step
  1. Combine the ground meat, egg, breadcrumbs, Parmesan, minced garlic, parsley, Italian seasoning, kosher salt, and black pepper in a bowl. Mix only until the ingredients are combined, then shape the mixture into approximately 18–20 small meatballs, about 1 1/2 inches (4 cm) each.
  2. Place the diced bacon in a large skillet or Dutch oven over medium heat. Cook for 5–7 minutes, until browned and most of the fat has rendered, then transfer the bacon to a plate and leave about 1–2 tablespoons of fat in the pan.
  3. Add the meatballs to the bacon fat, working in batches if necessary so they have room to brown. Cook for about 5–7 minutes total, turning them onto several sides, then remove them from the pan; they do not need to be fully cooked yet.
  4. Add the chopped onion to the same pan and cook for 3–4 minutes, stirring until softened. Add the minced garlic and cook for about 30 seconds, then stir in the crushed tomatoes, diced tomatoes, oregano, and cooked bacon, seasoning lightly because the bacon and Parmesan already contain salt.
  5. Return the browned meatballs to the tomato sauce and partially cover the pan. Simmer gently for 15–20 minutes, turning the meatballs once or twice, until they are cooked through and reach 160°F (71°C) in the center.
  6. Meanwhile, bring a large pot of well-salted water to a boil and cook the pasta according to the package timing until al dente. Before draining, reserve at least 1/2 cup of the pasta water, then drain the noodles.
  7. Toss the drained pasta with some of the tomato sauce, adding a small splash of reserved pasta water if the sauce seems thick. Serve the pasta with the meatballs, bacon, optional fresh herbs, and grated Parmesan.

Notes

Do not overmix the meatball mixture, and keep the sauce at a gentle simmer rather than a rapid boil. Refrigerate leftovers promptly and reheat gently with a splash of water or sauce.
