Step-by-Step
- Heat the oven to 275°F (135°C). Lightly grease a 9 x 13-inch baking dish so the sauce and chicken are easy to serve after baking.
- Arrange the dried beef over the bottom of the prepared baking dish. If you prefer a milder salty flavor, briefly rinse the dried beef and pat it dry before layering it in the dish.
- Wrap each chicken breast half with one bacon slice, then place the wrapped chicken over the dried beef without overcrowding the pieces.
- Stir together the undiluted cream of chicken soup and sour cream until smooth. Spread or pour the mixture evenly over the chicken.
- Cover the baking dish tightly with foil and bake at 275°F for approximately 3 hours, until the chicken is fully cooked and tender.
- Let the casserole stand for a few minutes before serving. Spoon plenty of the creamy sauce over rice, mashed potatoes, or noodles.
Notes
Do not add extra salt because the dried beef, bacon, and condensed soup are already salty. Thin-cut bacon works best during the long, low-temperature bake; avoid thick-cut bacon and overcrowding the chicken. Refrigerate leftovers promptly and reheat gently until hot.
