- Heat the oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment, and place a wire rack on top if you want improved air circulation and crispier skin.
- Pat the chicken drumsticks very dry with paper towels. Place them in a bowl, coat with olive oil, and rub evenly with paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
- Arrange the seasoned drumsticks in a single layer on the prepared baking sheet, leaving space between each piece. Bake for 35 to 45 minutes, turning once if desired.
- Check the thickest part of the chicken with an instant-read thermometer, avoiding the bone. The drumsticks are safe when they reach at least 165°F (74°C), although dark meat is often especially tender at approximately 175°F to 185°F.
- Rest the baked drumsticks for about 5 minutes before serving. If the chicken is cooked through but the skin needs more color, broil it for 1 to 3 minutes while watching closely.
Notes
Dry the drumsticks thoroughly for better browning. Keep leftovers refrigerated and reheat until hot throughout. For a larger batch, use approximately 1 tablespoon olive oil and 1 1/2 to 2 teaspoons of seasoning blend per pound of chicken.
