  • 8 about 2 pounds Bone-in, skin-on chicken drumsticks
  • 2 tablespoons Olive oil
Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment, and place a wire rack on top if you want improved air circulation and crispier skin.
  2. Pat the chicken drumsticks very dry with paper towels. Place them in a bowl, coat with olive oil, and rub evenly with paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
  3. Arrange the seasoned drumsticks in a single layer on the prepared baking sheet, leaving space between each piece. Bake for 35 to 45 minutes, turning once if desired.
  4. Check the thickest part of the chicken with an instant-read thermometer, avoiding the bone. The drumsticks are safe when they reach at least 165°F (74°C), although dark meat is often especially tender at approximately 175°F to 185°F.
  5. Rest the baked drumsticks for about 5 minutes before serving. If the chicken is cooked through but the skin needs more color, broil it for 1 to 3 minutes while watching closely.

Notes

Dry the drumsticks thoroughly for better browning. Keep leftovers refrigerated and reheat until hot throughout. For a larger batch, use approximately 1 tablespoon olive oil and 1 1/2 to 2 teaspoons of seasoning blend per pound of chicken.
