Easy One-Pot Chicken Bacon Ranch Pasta

Creamy chicken bacon ranch pasta made in one pot with penne or rotini, ranch seasoning, heavy cream, cheddar, and mozzarella. This cozy dinner serves 4–6 and is ready in about 40–45 minutes.

  • 6-8 slices Bacon, chopped
  • 1 pound Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 small Small yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
Seasoning
  • 1 packet, about 1 ounce or 28 g Ranch seasoning mix
Liquids and Pasta
  • 4 cups Low-sodium chicken broth
  • 1 cup Heavy cream
  • 12 ounces Uncooked penne or rotini pasta
Cheese and Garnish
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 1/2 teaspoon Black pepper
  • 2 tablespoons, optional Fresh parsley or green onions, chopped

Method
 

Step-by-Step
  1. Cook the chopped bacon in a large Dutch oven or deep skillet over medium heat for 6–8 minutes, stirring occasionally, until crisp. Transfer the bacon to a paper-towel-lined plate and leave about 1 tablespoon of bacon fat in the pot.
  2. Add the chicken pieces to the bacon fat and cook for 3–5 minutes, stirring, until lightly browned. The chicken does not need to be fully cooked at this stage because it will continue cooking with the pasta.
  3. Add the chopped onion and cook for 2–3 minutes until it begins to soften. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Add the ranch seasoning, low-sodium chicken broth, heavy cream, and uncooked pasta. Stir well while scraping the browned bits from the bottom of the pot into the sauce.
  5. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Cover the pot partially and simmer for 12–16 minutes, stirring every few minutes, until the pasta is tender and most of the liquid has been absorbed.
  6. Remove the pot from the heat before adding the cheddar and mozzarella. Stir until both cheeses melt into a smooth, creamy sauce.
  7. Fold most of the cooked bacon into the pasta and taste the sauce. Adjust the black pepper or ranch seasoning if needed, then garnish with the remaining bacon and chopped parsley or green onions.

Notes

Use low-sodium chicken broth because bacon, ranch seasoning, and cheese already contain plenty of salt. Stir regularly during the simmer so the pasta does not stick. Add cheese off the heat to help prevent an oily or grainy sauce. Refrigerate leftovers in an airtight container and reheat gently with a splash of milk, cream, or broth.
