Cobbler Batter
  • 1 cup Self-rising flour
  • 1 cup Granulated sugar
  • 1 cup Milk
  • 1/2 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
Fruit Filling
  • 3-4 cups Sliced peaches, berries, or other prepared fruit
  • 1/4 cup Fruit syrup or juice, optional for canned fruit

Step-by-Step
  1. Heat the oven to 350°F (175°C). Place the 1/2 cup butter in a 9-inch square or similar 2-quart baking dish and let it melt in the oven, then carefully remove the hot dish.
  2. Stir together the self-rising flour, granulated sugar, milk, and vanilla extract until just combined. Do not overmix; a few small lumps are fine.
  3. Pour the batter over the melted butter in the baking dish. Do not stir the batter and butter together.
  4. Spoon the prepared fruit evenly over the batter. If using canned peaches, drain them lightly and add a small amount of their juice or syrup, up to 1/4 cup.
  5. Bake for 40 to 50 minutes, or until the top is golden brown and the edges are bubbling. Frozen fruit can be used without thawing but may require several additional minutes.
  6. Let the cobbler stand for 10 to 15 minutes before serving. Spoon it into bowls while warm and finish with vanilla ice cream or whipped cream.

Notes

The one-cup name refers to the equal measures of flour, sugar, and milk. For all-purpose flour, use 1 cup flour plus 1 1/2 teaspoons baking powder and 1/4 teaspoon salt. Avoid adding too much fruit syrup because excess liquid can make the center soggy.
