Easy Olive, Bacon, and Cheese Bread

A savory, yeast-free quick bread filled with green olives, crisp bacon, and melted cheese. This tender loaf takes about 15 to 20 minutes to prepare and bakes into a golden, sliceable centerpiece.

Dry Ingredients
  • 1 1/2 cups (190 g) All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper
Wet Ingredients
  • 3 Large eggs
  • 1/3 cup (80 ml) Milk
  • 1/3 cup (80 ml) Olive oil
Add-Ins
  • 1 cup (about 100 g) Grated Gruyère, Emmental, Swiss, or mild Cheddar cheese
  • 1/2 to 1 cup (about 100 g typical) Pitted green olives, roughly chopped and well drained
  • 6 to 8 slices (about 100 g) Bacon, cooked, drained, cooled, and chopped

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease and flour a 9 x 5-inch loaf pan, or line it with parchment paper.
  2. Cook the bacon until crisp, drain it well, and let it cool before chopping. Drain the olives thoroughly and blot them dry to remove excess brine.
  3. Whisk the flour, baking powder, salt, and freshly ground black pepper together in a large bowl.
  4. In a separate bowl, whisk the eggs, milk, and olive oil until blended. Stir the wet mixture into the dry ingredients just until no dry flour remains.
  5. Fold in the grated cheese, chopped olives, and bacon with a spatula. Stop mixing as soon as the ingredients are evenly distributed.
  6. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 45 to 55 minutes, until golden and a skewer inserted in the center comes out clean or with only a few moist crumbs.
  7. Cool the loaf in the pan for about 10 minutes, then remove it and let it cool further before slicing. Serve warm or at room temperature in thick slices.

Notes

Drain and blot the olives well because excess brine can make the loaf wet and too salty. Cool the bacon before folding it into the batter, and avoid overmixing for a tender crumb. Since the bacon, olives, and cheese are already salty, do not increase the salt unless using low-sodium ingredients.
