  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1 cup Milk
Seasoning
  • 1/2 teaspoon, plus more to taste Salt

  • 1 small pinch Sugar or nutmeg

Method
 

Step-by-Step
  1. Cook the frozen peas according to the package directions, or simmer them in lightly salted water until just tender. Drain them very well and set aside.
  2. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to make a smooth roux without browning it.
  3. Gradually whisk the milk into the roux. Continue cooking and stirring until the sauce thickens, usually 3 to 5 minutes.
  4. Stir in the salt and black pepper, adding a small pinch of sugar or nutmeg if desired. Taste and adjust the seasoning.
  5. Add the drained peas to the sauce and heat gently for 2 to 3 minutes, stirring carefully until every pea is hot and coated. Do not boil the finished dish for a long time.

Notes

Drain the peas thoroughly so they do not thin the sauce. For a thinner sauce, use 1 1/4 cups milk; for a thicker, more casserole-like consistency, use 3 tablespoons each butter and flour. A mixture of milk and cream or 1 cup half-and-half can be used for a richer version.
