Easy Nutella Cheesecake Bars

Baked Nutella cheesecake bars with a chocolate-cookie crust, creamy hazelnut filling, and optional Nutella drizzle. They are chilled thoroughly before slicing for clean, bakery-style squares.

Ingredients
  

Chocolate Cookie Crust
  • 1 1/2 cups Chocolate-cookie crumbs, such as crushed Oreos or chocolate wafer cookies
  • 5 tablespoons Unsalted butter, melted
  • 2 tablespoons Granulated sugar
Nutella Cheesecake Filling
  • 16 ounces (450 g) Full-fat cream cheese, softened
  • 1/2 cup Granulated sugar
  • 1 cup Nutella
  • 2 eggs Large eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
Optional Topping
  • 2-3 tablespoons Nutella, warmed slightly
  • As desired Chopped hazelnuts, chocolate shavings, or whipped cream

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides.
  2. Stir the chocolate-cookie crumbs, melted butter, and sugar until evenly moistened. Press the mixture firmly into the bottom of the prepared pan and bake for 8–10 minutes, then cool briefly.
  3. Beat the softened cream cheese and sugar on medium-low speed until smooth. Mix in the Nutella, vanilla, and salt, then add the eggs one at a time, mixing just until incorporated.
  4. Spread the filling over the crust and smooth the top. Bake for approximately 25–35 minutes, until the edges are set and the center still has a slight wobble.
  5. Cool the cheesecake completely at room temperature, then refrigerate for at least 3 hours; overnight chilling is best. Lift it from the pan, drizzle with warmed Nutella, garnish if desired, and slice.

Notes

Use room-temperature cream cheese and eggs for a smooth filling. Mix only until combined after adding the eggs to help prevent cracks. Store covered and refrigerated for up to 4–5 days, or freeze tightly wrapped for about 1 month.
