- Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides.
- Stir the chocolate-cookie crumbs, melted butter, and sugar until evenly moistened. Press the mixture firmly into the bottom of the prepared pan and bake for 8–10 minutes, then cool briefly.
- Beat the softened cream cheese and sugar on medium-low speed until smooth. Mix in the Nutella, vanilla, and salt, then add the eggs one at a time, mixing just until incorporated.
- Spread the filling over the crust and smooth the top. Bake for approximately 25–35 minutes, until the edges are set and the center still has a slight wobble.
- Cool the cheesecake completely at room temperature, then refrigerate for at least 3 hours; overnight chilling is best. Lift it from the pan, drizzle with warmed Nutella, garnish if desired, and slice.
Notes
Use room-temperature cream cheese and eggs for a smooth filling. Mix only until combined after adding the eggs to help prevent cracks. Store covered and refrigerated for up to 4–5 days, or freeze tightly wrapped for about 1 month.
