Peach Mixture
  • 4 medium peaches, about 3 cups Medium ripe peaches, peeled if desired, pitted, and prepared
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Granulated sugar, optional
  • 1/8 teaspoon Fine salt, optional
Ice Cream Base
  • 1 14-ounce can Sweetened condensed milk
  • 2 cups Cold heavy whipping cream
  • 1 teaspoon Pure vanilla extract

Method
 

Step-by-Step
  1. Prepare the peaches by dicing or puréeing about two-thirds of them and cutting the remaining third into small pieces. Toss the peaches with the lemon juice and optional sugar, then let them stand for 15 to 30 minutes. Drain excess juice if the fruit releases a lot of liquid.
  2. In a large bowl, stir together the sweetened condensed milk, vanilla, optional salt, and peach purée until evenly combined.
  3. In a separate chilled bowl, whip the cold heavy cream to stiff peaks. Stop as soon as the cream holds its shape so it does not become buttery.
  4. Fold about one-third of the whipped cream into the peach mixture to lighten it. Fold in the remaining whipped cream gently until no large white streaks remain.
  5. Fold in the reserved diced peaches, transfer the mixture to a loaf pan or freezer-safe container, and press plastic wrap directly against the surface. Cover and freeze for 6 to 8 hours or overnight.
  6. Let the ice cream stand at room temperature for 5 to 10 minutes before scooping. Serve in chilled bowls or cones with extra peach slices if desired.

Notes

Use fully ripe, flavorful peaches for the best taste and creamiest texture. Drain excess peach juice before adding the fruit, and avoid overmixing the whipped cream. Store tightly covered in the freezer and allow it to stand for 5 to 10 minutes before serving.
