- Place the strawberry gelatin powder in a mixing bowl. Pour in the boiling water and whisk for about 2 minutes, until every gelatin granule is completely dissolved.
- Stir in the cold water and ice cubes. Continue stirring until the gelatin mixture begins to cool and thicken, then remove any unmelted ice cubes.
- Fold the thawed whipped topping into the cooled gelatin mixture until smooth and evenly combined.
- Gently fold most of the prepared strawberries into the filling, reserving a few slices or halves for decorating the top.
- Spoon the filling into the prepared graham-cracker crust and smooth the surface with a spatula or the back of a spoon.
- Refrigerate the pie for at least 4 hours, or until firmly set. Garnish with the reserved strawberries before slicing and serving.
Notes
Make sure the gelatin is completely dissolved before adding the cold water. For especially clean slices, refrigerate the pie overnight and use a sharp knife dipped in warm water.
