Easy No-Bake Peppermint Bark Cookies

Crisp chocolate wafer cookies are dipped in peppermint-flavored white chocolate and finished with crushed candy canes. This easy holiday treat sets in the refrigerator and makes about 24 cookies.

  • 24 cookies Chocolate wafer cookies, such as Nabisco Famous Chocolate Wafers
  • 12 ounces White chocolate chips, white baking wafers, or chopped white chocolate
  • 1/2 teaspoon Peppermint extract
  • 3 candy canes, about 1/3 cup Standard-size candy canes, crushed

Method
 

Step-by-Step
  1. Line a baking sheet with parchment paper or wax paper. Crush the candy canes in a sealed bag into small pieces, keeping some texture rather than turning them into a fine powder.
  2. Place the white chocolate in a microwave-safe bowl. Microwave in 20- to 30-second intervals, stirring thoroughly after each interval, until nearly smooth and allow residual heat to finish melting it.
  3. Stir the peppermint extract into the melted white chocolate only after the chocolate has melted. Mix gently until the extract is evenly distributed.
  4. Dip each chocolate wafer into the peppermint white chocolate, coating it completely or halfway according to preference. Hold the cookie over the bowl briefly so excess chocolate drips back.
  5. Place each coated cookie on the lined baking sheet. Immediately sprinkle the top with crushed candy cane pieces while the chocolate is still soft.
  6. Refrigerate the cookies for 30 to 45 minutes, or until the coating is firm. Store finished cookies in an airtight container in a cool place or in the refrigerator.

Notes

Add peppermint extract sparingly because too much can taste medicinal. White chocolate scorches easily, so use short microwave intervals and stir often. White candy melts may be substituted for the white chocolate when a coating that sets reliably is preferred.
