  • 1 cup (90 g) Old-fashioned rolled oats
  • 1/2 cup (128 g) Creamy peanut butter
  • 1/3 cup (113 g) Honey
  • 1/2 cup (55 g) Ground flaxseed
  • 1/3 cup (60 g) Mini semisweet chocolate chips
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Fine salt
Optional Add-Ins
  • 1 tablespoon Chia seeds
  • 1/3-2/3 cup Unsweetened shredded coconut

Method
 

Step-by-Step
  1. Add the rolled oats, ground flaxseed, mini chocolate chips, and any optional chia seeds or shredded coconut to a mixing bowl.
  2. Stir in the creamy peanut butter, honey, vanilla extract, and fine salt until the mixture is evenly combined.
  3. Cover the bowl and refrigerate the mixture for about 30 minutes so it firms up and becomes easier to shape.
  4. Scoop approximately 1 tablespoon of the chilled mixture for each bite and roll it between your palms into a ball about 1 inch in diameter.
  5. Serve immediately or transfer the finished energy balls to an airtight container and refrigerate for up to 1 week.

Notes

Use regular creamy peanut butter for balls that hold their shape more easily. If the mixture is dry or crumbly, add peanut butter or honey 1 teaspoon at a time; if it is too sticky, mix in a little more oats or ground flaxseed. Maple syrup may replace honey in an equal amount, although the mixture may be slightly softer. Freeze for about 2–3 months.
