- Whisk the instant banana cream pudding mix and cold whole milk in a medium bowl for about 2 minutes, or until the mixture thickens. Stir in the vanilla extract.
- Gently fold approximately two-thirds of the thawed whipped topping into the pudding mixture. Continue folding until light, smooth, and evenly combined.
- Slice the bananas and place a layer in the bottom of each mini graham-cracker crust. Divide the banana slices as evenly as possible among all 12 crusts.
- Spoon or pipe the banana pudding mixture over the banana layer, filling each crust. Smooth the tops lightly without pressing down on the delicate crusts.
- Refrigerate the assembled pies for at least 1 hour. For a firmer, cleaner texture, chill them for the full 2 hours.
- Just before serving, top each pie with the remaining whipped topping, a few fresh banana slices, and one vanilla wafer cookie. Keep the pies refrigerated until they are ready to serve.
Notes
Use very cold milk and instant pudding mix, not cook-and-serve pudding. Add the final banana slices shortly before serving because exposed bananas brown and soften quickly. For the firmest mini pies, refrigerate for 2 hours and keep chilled until serving.
