  • 12 crusts Ready-made mini graham-cracker crusts, approximately 2 inches each
  • 1 3.4-ounce box Instant banana cream pudding mix
  • 2 cups Cold whole milk
  • 1 teaspoon Vanilla extract
  • 1 8-ounce container Frozen whipped topping, thawed
  • 3 bananas Medium ripe bananas, sliced
Garnish
  • 12 cookies Vanilla wafer cookies
  • Optional Whipped cream or additional whipped topping

Method
 

Step-by-Step
  1. Whisk the instant banana cream pudding mix and cold whole milk in a medium bowl for about 2 minutes, or until the mixture thickens. Stir in the vanilla extract.
  2. Gently fold approximately two-thirds of the thawed whipped topping into the pudding mixture. Continue folding until light, smooth, and evenly combined.
  3. Slice the bananas and place a layer in the bottom of each mini graham-cracker crust. Divide the banana slices as evenly as possible among all 12 crusts.
  4. Spoon or pipe the banana pudding mixture over the banana layer, filling each crust. Smooth the tops lightly without pressing down on the delicate crusts.
  5. Refrigerate the assembled pies for at least 1 hour. For a firmer, cleaner texture, chill them for the full 2 hours.
  6. Just before serving, top each pie with the remaining whipped topping, a few fresh banana slices, and one vanilla wafer cookie. Keep the pies refrigerated until they are ready to serve.

Notes

Use very cold milk and instant pudding mix, not cook-and-serve pudding. Add the final banana slices shortly before serving because exposed bananas brown and soften quickly. For the firmest mini pies, refrigerate for 2 hours and keep chilled until serving.
