  1. Line two baking sheets with parchment paper or wax paper. Place the sugar and light corn syrup in a medium saucepan over medium heat and stir until the sugar dissolves.
  2. Bring the syrup mixture to a gentle boil, then continue boiling for about 1 minute. Remove it from the heat promptly so the cookies do not become hard or crumbly.
  3. Stir the creamy peanut butter into the hot syrup until smooth and fully blended. Mix in the vanilla extract and pinch of salt if using.
  4. Place the plain cornflakes in a large mixing bowl and pour the warm peanut butter mixture over them. Fold gently until the flakes are evenly coated, taking care not to crush them.
  5. Drop rounded tablespoons of the mixture onto the prepared baking sheets. Lightly grease the spoon or cookie scoop first if the mixture sticks.
  6. Let the cookies cool and set at room temperature for 20 to 30 minutes. Refrigerate them briefly if you need them to firm up sooner.

Notes

Do not boil the sugar and corn syrup mixture longer than about 1 minute after it begins bubbling, since overcooking can make the cookies hard. Store in an airtight container at room temperature for up to about 1 week, separating layers with parchment paper.
