Easy No-Bake Cookies and Cream Dessert

A chilled, layered dessert made with chocolate sandwich cookies, cream cheese, chocolate pudding, and whipped topping. This rich yet fluffy refrigerator treat serves 12 to 16 people.

Ingredients
  

Cookie Crust
  • 24 cookies Chocolate sandwich cookies, such as Oreo cookies
  • 6 tablespoons Unsalted butter, melted
Cream Cheese Layer
  • 8 ounces Cream cheese, softened
  • 1/4 cup Granulated sugar or powdered sugar
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla extract
  • 8 ounces Whipped topping, thawed
  • Several cookies from remaining 12 Chocolate sandwich cookies, roughly chopped
Chocolate Pudding Layer
  • 1 box, 3.9 ounces Instant chocolate pudding mix
  • 3 1/4 cups Cold milk
Topping
  • 8 ounces Remaining whipped topping, thawed
  • As desired Remaining chocolate sandwich cookies, crushed or chopped

Method
 

Step-by-Step
  1. Crush 24 chocolate sandwich cookies into fine crumbs. Stir the crumbs with 6 tablespoons melted unsalted butter, then press the mixture firmly into the bottom of a 9-by-13-inch baking dish. Refrigerate the crust for 15 to 20 minutes.
  2. Beat the softened cream cheese with 1/4 cup sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth. Scrape the bowl as needed so the mixture is free of lumps.
  3. Gently fold approximately 8 ounces of thawed whipped topping into the cream cheese mixture. Stir in several roughly chopped cookies from the remaining cookies.
  4. Whisk one 3.9-ounce box of instant chocolate pudding mix with 3 1/4 cups cold milk for about 2 minutes, until the pudding thickens.
  5. Spread the cream cheese mixture over the chilled cookie crust. Carefully spread the thickened chocolate pudding over the cream cheese layer.
  6. Spread the remaining 8 ounces of whipped topping over the pudding layer. Smooth the surface gently so the layers remain distinct.
  7. Crush or chop the reserved cookies and sprinkle them over the whipped topping. Cover the dish and refrigerate for at least 4 hours; overnight chilling is best for clean slices.

Notes

Use fully softened cream cheese and thawed whipped topping for a smooth, fluffy filling. Powdered sugar dissolves especially smoothly, although granulated sugar also works. For neat slices, chill overnight and wipe a sharp knife clean between cuts.
