These rich chocolate oat cookies are made with coconut oil, peanut butter, maple syrup, cocoa, and shredded coconut. They come together on the stovetop and set in the refrigerator with no oven required.

Cookie Mixture
  • 1/2 cup Coconut oil, preferably virgin or unrefined
  • 1/2 cup Creamy peanut butter
  • 1/2 cup Pure maple syrup
  • 1/4 cup Unsweetened cocoa powder
  • 1 teaspoon Pure vanilla extract
  • 1/4 teaspoon Fine salt
  • 2 cups Quick-cooking rolled oats
  • 1/2 cup Unsweetened shredded coconut

Method
 

Step-by-Step
  1. Line a baking sheet with parchment paper or waxed paper and set it aside. Measure the oats and shredded coconut before starting so they can be added quickly once the warm mixture is ready.
  2. Add the coconut oil, peanut butter, maple syrup, cocoa powder, and salt to a saucepan over medium-low heat. Stir continuously until the coconut oil melts and the mixture becomes smooth.
  3. Bring the mixture just to a gentle simmer and cook for about 1 to 2 minutes, stirring constantly. Do not let it hard-boil, since excessive cooking can make the finished cookies dry or crumbly.
  4. Remove the saucepan from the heat and stir in the vanilla extract. Add the quick oats and shredded coconut, then mix thoroughly until every oat and coconut strand is coated.
  5. Drop heaping tablespoons of the mixture onto the prepared baking sheet. Flatten the tops slightly with the back of a spoon if you prefer wider, more even cookies.
  6. Refrigerate the cookies for 20 to 30 minutes, or until firm. Keep them chilled for storage because coconut oil softens at warm room temperature.

Notes

Use quick-cooking oats for the most even texture. For firmer cookies, chill longer or add 2 to 3 tablespoons more oats; for softer cookies, use slightly less oats and avoid overcooking the syrup mixture. Honey may replace maple syrup, and almond butter or sunflower-seed butter may replace peanut butter.
