- Combine the graham-cracker crumbs, granulated sugar, and melted butter until every crumb is evenly moistened.
- Press the crust firmly into the bottom and slightly up the sides of a 9-inch springform pan or deep pie dish. Refrigerate for 15–20 minutes.
- Beat the softened cream cheese, confectioners’ sugar, and vanilla extract until smooth and creamy.
- Whisk the instant banana pudding mix with the cold whole milk for about 2 minutes, until thickened.
- Beat or fold the pudding mixture into the cream-cheese mixture until smooth and evenly combined.
- Fold in the whipped topping or whipped cream gently, stopping as soon as the filling is fluffy and uniform.
- Arrange about half of the banana slices over the chilled crust. Spoon in half of the filling, add the remaining banana slices, and spread the remaining filling over the top.
- Cover and refrigerate for at least 4 hours, preferably overnight, until firm.
- Garnish with whipped cream and fresh banana slices immediately before serving, adding optional crumbs, banana chips, or walnuts if desired.
Notes
Use softened full-fat brick-style cream cheese for the firmest filling. A teaspoon of lemon juice may be tossed with the interior banana slices to slow browning, though it adds a slight tang. Keep decorative banana slices off the cheesecake until shortly before serving. For neat slices, chill overnight and warm a knife under hot water, wiping it dry before each cut.
