Step-by-Step
- Grease or parchment-line a 9 x 13-inch baking pan, leaving an overhang if using parchment. Spread the Fritos evenly across the bottom.
- Combine the granulated sugar and light corn syrup in a saucepan over medium heat. Stir until the mixture reaches a boil, then boil for about 1 minute.
- Remove the saucepan from the heat and stir in the creamy peanut butter until the mixture is smooth. Pour it immediately over the Fritos and gently spread it across the chips.
- Melt the chocolate chips in the microwave in 20-30-second intervals, stirring between each interval, or melt them over a double boiler. Spread the melted chocolate over the peanut butter-coated Fritos.
- Let the bars cool and firm at room temperature or refrigerate them briefly. Lift them from the pan using the parchment overhang, then cut into small squares.
Notes
Boil the sugar and corn syrup mixture for about 1 minute, but not much longer, or the bars may become hard or brittle. Store the cooled bars in a covered container at room temperature or in the refrigerator.
