Easy Muffin Tin Beef Taco Cups

Seasoned ground beef, salsa, and melted cheese are baked between two wonton wrappers in a muffin tin for crisp, individual taco cups. Add fresh toppings just before serving.

  • 1 pound Lean ground beef
  • 1 1-ounce packet Taco seasoning
  • 1/3 cup Water
  • 1/2 cup Salsa
  • 24 approximately 3 1/2-inch wrappers Square wonton wrappers
  • 1 cup Shredded Mexican-blend, cheddar, or Monterey Jack cheese
  • As needed Nonstick cooking spray

  • As desired Diced tomato
  • As desired Shredded lettuce
  • As desired Sour cream
  • As desired Sliced green onions
  • As desired Chopped cilantro
  • As desired Diced avocado
  • As desired Sliced jalapeño

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly coat a standard 12-cup muffin tin with nonstick cooking spray.
  2. Brown the lean ground beef in a skillet over medium-high heat, breaking it into small crumbles as it cooks. Drain any excess fat.
  3. Stir the taco seasoning, water, and salsa into the cooked beef. Simmer for 2–3 minutes, stirring occasionally, until the mixture thickens slightly.
  4. Press one wonton wrapper into each muffin cup, letting the corners stand up above the rim.
  5. Spoon about 1 tablespoon of beef mixture into each cup, then sprinkle each with a small amount of cheese.
  6. Place a second wonton wrapper over the first one, rotating it slightly so the corners do not line up. Press it gently into the cup.
  7. Add another tablespoon of beef mixture to each cup and finish with the remaining cheese.
  8. Bake for 10–15 minutes, until the wonton edges are crisp and golden and the cheese is melted.
  9. Let the taco cups cool for 2–3 minutes before carefully removing them from the muffin tin. Add toppings just before serving.

Notes

Rotate the second wonton wrapper to create a stronger, crisp layered edge. Let the beef mixture cool and thicken slightly before assembling, and avoid overfilling the cups. For extra-crisp results, place the muffin tin on a preheated baking sheet and do not cover the pan while baking.
