  • 2 cups (240 g) All-purpose flour
  • 1/2 cup (100 g) Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Fine salt
  • 1 large Large egg
  • 1 cup (240 ml) Milk
  • 1/2 cup (120 ml oil or 113 g butter) Neutral vegetable oil or melted and cooled butter
  • 1 teaspoon Vanilla extract
Optional Mix-Ins
  • 1 cup Blueberries, chocolate chips, chopped nuts, or other mix-ins

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease it lightly.
  2. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
  3. In a separate bowl, whisk the egg, milk, oil or melted butter, and vanilla extract until combined.
  4. Pour the wet mixture into the dry mixture and stir gently just until no large pockets of dry flour remain. A slightly lumpy batter is ideal.
  5. Fold in the optional mix-ins with a few gentle strokes, taking care not to overwork the batter.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
  7. Bake for 18 to 22 minutes, until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.

Notes

For taller domed tops, bake at 425°F (220°C) for 5 minutes, then reduce the oven to 350°F (175°C) and continue baking for approximately 12 to 17 minutes. Store cooled muffins in an airtight container and enjoy within a few days for the best texture.
