- Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease it lightly.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl.
- In a separate bowl, whisk the egg, milk, oil or melted butter, and vanilla extract until combined.
- Pour the wet mixture into the dry mixture and stir gently just until no large pockets of dry flour remain. A slightly lumpy batter is ideal.
- Fold in the optional mix-ins with a few gentle strokes, taking care not to overwork the batter.
- Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
- Bake for 18 to 22 minutes, until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.
Notes
For taller domed tops, bake at 425°F (220°C) for 5 minutes, then reduce the oven to 350°F (175°C) and continue baking for approximately 12 to 17 minutes. Store cooled muffins in an airtight container and enjoy within a few days for the best texture.
