- Heat the oven to 425°F (220°C) and line a 12-cup muffin pan with paper liners.
- Whisk the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves together in a medium bowl.
- In a separate large bowl, whisk the melted, slightly cooled butter with the granulated sugar, brown sugar, eggs, pumpkin puree, milk, and vanilla until smooth.
- Add the dry mixture to the pumpkin mixture. Stir gently just until combined; a few small streaks of flour are preferable to overmixing.
- Divide the batter evenly among the lined muffin cups, filling each one nearly to the top.
- Bake at 425°F for 5 minutes. Without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for 15 to 17 minutes.
- Check for doneness by inserting a toothpick into the center of a muffin. It should come out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack to finish cooling.
Notes
Use pure pumpkin puree rather than pumpkin pie filling. Avoid overmixing the batter, and keep the oven door closed during the temperature change. Optional additions include 1/2 to 1 cup chocolate chips, chopped pecans, or a coarse-sugar topping.
