Easy Mint Fudge Ice Cream Stack

A no-bake frozen dessert made by folding chocolate and mint biscuits through softened mint chocolate-chip ice cream, then freezing it until firm and finishing it with chocolate fudge sauce and chocolate curls.

Ingredients
  

Main Ingredients
  • 1.5 litres Mint chocolate-chip ice cream, slightly softened
  • 250 g packet Chocolate ripple or other plain chocolate biscuits
  • 200 g packet Mint-chocolate biscuits, such as Mint Slice, roughly chopped
  • 125 ml (½ cup) Chocolate fudge topping or sauce
Decoration
  • As needed Extra chopped mint chocolate or chocolate curls

Method
 

Step-by-Step
  1. Line the base and sides of a 20 cm springform pan or loaf pan with baking paper or plastic wrap, leaving an overhang to help lift out the frozen dessert.
  2. Let the mint chocolate-chip ice cream stand briefly until it is soft enough to stir, but do not let it melt or become runny.
  3. Roughly crush the chocolate ripple biscuits and roughly chop the mint-chocolate biscuits.
  4. Fold both types of biscuits through the softened ice cream until the pieces are evenly distributed while retaining their texture.
  5. Spoon the mixture into the prepared pan and press it down firmly to remove large air pockets. Smooth the surface, cover the pan, and freeze for at least 6 hours or overnight.
  6. Remove the stack from the freezer 5–10 minutes before serving. Transfer it to a plate, gently warm the fudge sauce until pourable, allow it to cool slightly, drizzle it over the dessert, and scatter with chopped mint chocolate or chocolate curls.

Notes

Soften the ice cream only until spreadable. If it becomes runny, the biscuit pieces can lose their texture and the dessert becomes harder to unmould. Warm the fudge sauce very gently and cool it slightly before drizzling so it does not melt the ice cream immediately.
