Step-by-Step
  1. Heat the oven to 375°F (190°C), then line a baking sheet with parchment paper or lightly grease it.
  2. Unroll the chilled crescent dough and separate it into 8 triangles. Cut each triangle lengthwise into 3 narrow triangles to create 24 dough pieces.
  3. Cut each American cheese slice into 6 narrow strips, creating 12 strips total. Place one cheese strip near the wide end of each dough piece, using the cheese sparingly so it melts neatly.
  4. Place one cocktail sausage at the wide end of each dough piece, directly over the cheese. Roll the dough around the sausage and cheese, keeping the filling enclosed as much as possible.
  5. Arrange the wrapped sausages seam-side down on the prepared baking sheet, leaving a little space between each piece. If desired, lightly brush the exposed dough with beaten egg for a more evenly browned finish.
  6. Bake for 12–15 minutes, or until the crescent dough is puffed and golden brown. Let the mini cheese dogs cool briefly, then serve warm with your favorite dipping sauces.

Notes

Keep the crescent dough chilled until you are ready to use it because cold dough is easier to separate and cut cleanly. Use thin cheese strips to help prevent excessive leakage. Store leftovers covered in the refrigerator and reheat until warm.
