Easy Mexican Casserole Recipe

A quick, comforting dinner casserole layered with tortilla chips, seasoned ground beef, refried beans, tomatoes with green chiles, and melted Cheddar cheese. It takes about 10 minutes to prepare and bakes in approximately 20 minutes.

  • 1 pound Ground beef
  • 1 1-ounce packet Taco seasoning mix
  • 1 15-ounce can Refried beans
  • 1 10.75-ounce can Condensed tomato soup, undiluted
  • 1 10-ounce can Diced tomatoes with green chiles, undrained
  • 1 8-ounce bag Tortilla chips
  • 2 cups Shredded Cheddar cheese

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Brown 1 pound of ground beef in a skillet over medium heat for about 5 to 7 minutes, breaking it apart as it cooks, until no longer pink. Drain excess fat.
  2. Stir the taco seasoning, refried beans, undiluted condensed tomato soup, and undrained diced tomatoes with green chiles into the cooked beef. Heat until the mixture is thoroughly combined and warmed through.
  3. Spread a layer of tortilla chips across the bottom of a 9-by-13-inch baking dish. Keep some chips aside if you want extra crunch at serving time.
  4. Spoon the beef and bean mixture evenly over the tortilla chips. Sprinkle the 2 cups of shredded Cheddar evenly across the top.
  5. Bake the casserole uncovered for about 20 minutes, until hot and the cheese is melted. Serve immediately with optional sour cream, salsa, or sliced green onions.

Notes

Drain the beef well so excess grease does not make the casserole heavy or watery. Use sturdy tortilla chips and avoid crushing them too finely; reserve some chips to add just before serving because the chips underneath the filling soften during baking.
