A colorful three-bean salad made with fresh Mediterranean vegetables, herbs, feta, and a lemon–olive-oil dressing. This no-cook recipe is ideal for lunch, picnics, potlucks, and make-ahead meals.

Salad
  • 1 15-ounce can Chickpeas, drained and rinsed
  • 1 15-ounce can Cannellini beans, drained and rinsed
  • 1 15-ounce can Kidney beans, drained and rinsed
  • 1 medium Medium cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1/2 medium Medium red onion, finely diced
  • 1/2 medium Medium red bell pepper, diced
  • 1/2 cup Fresh flat-leaf parsley, chopped
  • 2 tablespoons Fresh mint, chopped
  • 4 ounces Feta cheese, crumbled
Dressing
  • 1/3 cup Extra-virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 2 tablespoons Red wine vinegar
  • 1 clove Garlic, finely grated or minced
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon, plus more to taste Fine salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Drain and rinse the chickpeas, cannellini beans, and kidney beans thoroughly under cold water. Allow them to drain again so excess liquid does not dilute the dressing or make the salad watery.
  2. Add the beans, cucumber, cherry tomatoes, red onion, red bell pepper, parsley, and mint to a large bowl. Toss the vegetables and beans lightly so the mixture remains fresh and intact.
  3. Whisk the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper in a small bowl until combined. Taste the dressing and make sure the balance is bright, savory, and pleasantly tangy.
  4. Pour the dressing over the bean and vegetable mixture. Toss gently with a large spoon or rubber spatula to coat everything without crushing the beans.
  5. Add the crumbled feta, if using, and fold it into the salad carefully. Taste and adjust the salt, pepper, lemon juice, or vinegar according to your preference.
  6. Serve immediately, or refrigerate the salad for 15–30 minutes to let the flavors develop. Bring it close to room temperature before serving for the best flavor.

Notes

Mint and feta are optional but commonly used. For make-ahead preparation, refrigerate the beans and vegetables with the dressing, then add feta and delicate herbs shortly before serving. Store leftovers covered in the refrigerator and stir gently before eating.
