- Heat the oven to 375°F (190°C). Line a rimmed baking sheet with parchment, or lightly grease a loaf pan.
- In a large bowl, whisk together the eggs, milk, ketchup, Worcestershire sauce, minced garlic, kosher salt, black pepper, Italian seasoning, and smoked paprika.
- Add the finely diced onion and ground beef. Mix gently with clean hands or a fork just until the ingredients are incorporated, taking care not to compact the mixture.
- Shape the meat mixture into an approximately 9 × 5-inch loaf on the prepared baking sheet, or place it in a lightly greased loaf pan.
- Stir together the glaze ingredients. Spread about two-thirds of the glaze over the top and sides of the meatloaf.
- Bake for 55–70 minutes, adding the remaining glaze during the last 10–15 minutes if desired. Continue cooking until the center reaches 160°F (71°C).
- Rest the meatloaf for 10–15 minutes before slicing. Serve warm with your favorite vegetable and potato sides.
Notes
Use 80–85% lean beef for the best balance of moisture and flavor. For strict gluten-free cooking, verify that the Worcestershire sauce, ketchup, mustard, seasonings, and packaged ground meat are certified gluten-free.
