  • 2 pounds Carrots, peeled and cut into 1½- to 2-inch pieces
  • 2 tablespoons Unsalted butter, melted, or olive oil
  • 2 tablespoons Pure maple syrup
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Freshly ground black pepper
Optional Additions
  • ½ teaspoon Fresh thyme leaves
  • ¼ teaspoon Dried thyme
  • 1 tablespoon Chopped parsley, for garnish
  • 1 small pinch Cinnamon or cayenne

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. Add the peeled, evenly cut carrots to a large bowl. Pour in the melted butter or olive oil and maple syrup, then add the kosher salt, black pepper, and optional thyme or spice.
  3. Toss until every carrot piece is coated. Spread the carrots in one layer on the prepared pan, leaving space between pieces.
  4. Roast for 22 to 30 minutes, turning the carrots once halfway through. Continue roasting until tender in the center and lightly browned around the edges.
  5. Taste and adjust the salt if needed. Garnish with chopped parsley or additional thyme, then serve hot.

Notes

Pure maple syrup gives the best flavor and caramelizes cleanly. Do not crowd the pan; use two pans if needed so the carrots roast instead of steam. Baby carrots may be roasted whole, while larger carrots should be cut into evenly sized pieces.
