- Pat the pork chops dry and season both sides with the kosher salt and black pepper.
- Whisk the maple syrup, Dijon mustard, apple cider vinegar, soy sauce, minced garlic, and optional dried thyme together in a small bowl.
- Heat the oil in a large skillet over medium-high heat. Add the pork chops and sear for about 3 to 4 minutes per side, until browned.
- Reduce the heat to medium-low and pour the maple mixture into the skillet.
- Cook for another 3 to 6 minutes, turning the chops once or twice and spooning the glaze over them, until the pork reaches 145°F (63°C) internally.
- Remove the pork chops from the skillet and let them rest for 3 minutes. If desired, whisk the butter into the pan glaze before spooning it over the pork.
Notes
Pure maple syrup provides the cleanest flavor, although pancake syrup may be substituted. Bone-in chops generally stay juicier, while boneless chops may cook slightly faster. Keep the glaze at a gentle simmer because the maple sugars can burn if boiled aggressively. Use an instant-read thermometer and cook pork to 145°F (63°C), followed by the brief rest.
