- Heat the oven to 400°F and lightly grease a 9-by-13-inch baking dish.
- Pat the pork chops dry and season both sides with the kosher salt and freshly ground black pepper.
- Whisk the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, olive oil, and minced garlic together until smooth.
- Place the pork chops in the prepared baking dish and spoon or brush about half of the glaze over the tops.
- Bake uncovered for approximately 20–25 minutes, depending on thickness. Turn the chops or brush them with the remaining glaze halfway through if desired.
- Check the thickest part with an instant-read thermometer and remove the pork from the oven as soon as it reaches 145°F.
- Rest the pork chops for 3–5 minutes before serving. For a more caramelized glaze, broil for 1–2 minutes at the end while watching closely.
Notes
Use pure maple syrup rather than pancake syrup for the cleanest flavor. Bone-in chops may need a few extra minutes, while thin chops may finish in 15–18 minutes. Do not rely on color or time alone; use an instant-read thermometer to prevent dry pork.
