- Drain the mandarin oranges very well, reserving a few segments for decoration if desired. Pat them dry gently with paper towels if they still seem wet.
- Beat the softened cream cheese until smooth and light. Gradually add the sweetened condensed milk, mixing until the filling is completely blended.
- Mix in the fresh lemon juice and vanilla extract until the filling is smooth and slightly thickened. Avoid overmixing once the texture is creamy and uniform.
- Gently fold in the drained mandarin-orange segments, taking care not to break them up excessively. Reserve a few intact pieces for the finished pie if you want a decorated top.
- Spoon the citrus filling into the prepared 9-inch graham-cracker crust. Smooth the top with the back of a spoon or a small spatula.
- Cover the pie and refrigerate it for at least 3 hours, or leave it overnight for a fully chilled, firm texture. Add whipped cream and reserved mandarin segments just before serving.
Notes
Drain the mandarin oranges thoroughly because extra syrup can loosen the filling and make the crust soggy. Use softened cream cheese rather than melted cream cheese, and allow the pie to chill fully before slicing.
