Easy Low Carb Spicy Sausage Dip with Bacon and Cheese

A hot, creamy, cheesy dip packed with spicy sausage, smoky bacon, jalapeño, and two kinds of cheese. Serve it warm with pork rinds or fresh low-carbohydrate vegetables.

  • 1 lb Hot or spicy ground pork sausage
  • 8 oz Full-fat cream cheese, softened and cut into cubes
  • 1 cup Shredded sharp cheddar cheese
  • 1/2 cup Shredded pepper Jack or Monterey Jack cheese
  • 6-8 slices Cooked bacon, crumbled
  • 1/2 cup Sour cream
  • 1-2 jalapeños Jalapeños, finely chopped
  • 2 green onions Green onions, thinly sliced
Seasonings
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Smoked paprika, optional
  • To taste Black pepper

Method
 

Instructions
  1. Cook the bacon until crisp, drain it, cool it slightly, and crumble it.
  2. Brown the spicy sausage in a skillet over medium heat, breaking it into small pieces, until no pink remains, about 7 to 10 minutes. Drain excess fat if needed.
  3. Add the softened cream cheese and sour cream to the warm sausage. Stir until the cream cheese is mostly melted and the mixture is smooth.
  4. Stir in the cheddar, pepper Jack, jalapeño, garlic powder, smoked paprika, green onion, and most of the bacon.
  5. Transfer the mixture to a small baking dish or ovenproof skillet. Sprinkle the remaining cheese and bacon over the top.
  6. Bake at 350°F for 20 to 25 minutes, until hot, bubbling, and lightly browned. Serve warm.
