Easy Low-Carb Lemon Lime Bites

These no-bake low-carb bites combine rich cream cheese and butter with fresh lemon, lime, and vanilla for a cool, creamy citrus treat. Coat them in unsweetened shredded coconut for a pretty finish and extra texture.

  • 1 tablespoon Finely grated lemon zest
  • 1 tablespoon Finely grated lime zest
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Fresh lime juice
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Fine salt
Optional Coating
  • 1 cup Unsweetened finely shredded coconut, divided

Method
 

Step-by-Step
  1. Beat the softened cream cheese and softened butter together until smooth and creamy. Scrape down the sides of the bowl so the mixture is evenly blended.
  2. Add the powdered sweetener, lemon zest, lime zest, lemon juice, lime juice, vanilla extract, and fine salt. Mix until the citrus and sweetener are distributed throughout the creamy mixture.
  3. Refrigerate the mixture for 30 to 45 minutes, or until firm enough to handle. A longer chill may be helpful if the mixture feels soft in a warm kitchen.
  4. Scoop approximately 1 tablespoon of the chilled mixture for each bite and roll it between your palms into a smooth ball. Repeat until all of the mixture has been shaped.
  5. Roll each bite in unsweetened finely shredded coconut if desired. Turn the balls gently so the coconut clings to the entire surface.
  6. Chill the finished bites for at least 30 minutes before serving. Keep them refrigerated in an airtight container.

Notes

Use powdered rather than granulated sweetener to avoid a gritty texture in this chilled no-bake recipe. Zest the lemon and lime before juicing, and avoid the white pith because it can taste bitter. For firmer bites, chill the mixture longer or briefly freeze the shaped bites before serving.
