Ingredients

Chicken
  • 1 1/2 pounds Boneless, skinless chicken thighs or chicken breasts, cut into bite-size pieces
  • 1/2 teaspoon Fine salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Avocado oil or other neutral cooking oil
Sesame Sauce
  • 1/3 cup Coconut aminos or reduced-sodium soy sauce/tamari
  • 2 tablespoons Toasted sesame oil
  • 2 tablespoons Unseasoned rice vinegar
  • 2 tablespoons Keto brown sweetener, such as erythritol-allulose or monk-fruit blend
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, finely grated
  • 1/2 teaspoon or 1 optional Red-pepper flakes or chili-garlic sauce
  • 1/2 teaspoon, optional Xanthan gum
  • 2 tablespoons Sesame seeds
Finishing
  • 2 green onions Green onions, thinly sliced
  • As desired Additional sesame seeds

Method

Step-by-Step
  1. Cut the chicken into bite-size pieces and pat it dry. Season evenly with the fine salt and black pepper.
  2. Whisk the coconut aminos or reduced-sodium soy sauce, toasted sesame oil, rice vinegar, keto brown sweetener, minced garlic, grated ginger, and optional red-pepper flakes or chili-garlic sauce in a bowl.
  3. Heat the avocado oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for approximately 4 to 6 minutes per side, working in batches if necessary, until browned and the internal temperature reaches 165°F (74°C).
  4. Reduce the heat to medium and pour the sauce into the skillet. Simmer for 2 to 4 minutes, stirring frequently so the sauce coats the chicken without scorching.
  5. For a thicker sauce, sprinkle in the xanthan gum gradually while whisking. Stir in the sesame seeds, then garnish with sliced green onions and additional sesame seeds if desired.

Notes

Toast the sesame seeds in a dry skillet for 1 to 2 minutes for a more aromatic, nutty flavor. Do not overcrowd the pan. Refrigerate leftovers in a covered container and reheat gently until hot.
